Quinoa Nuggets


Here’s one thing that I found difficult to do or buy: vegan snacks! Who here has ever went out with friends to a bar or restaurant and ended up eating french fries because it was the only vegan option on the menu? Without mentioning the possibility of animal fat in the frying process… I love french fries, which are not French but Belgians, however after some time I started to get frustrated of repeating the order over and over. For all those moments where you need some salty snack to get along with the beer, I present today the QUINOA NUGGETS ! So, besides the “belgians” fries, peanuts, pop corn we also have this incredibly tasty and crispy nuggets! Something for those moments when you want to dip it and eat it over and over YUMMI!

Ready in: 25 minutes

Portion: around 12 nuggets


1 cup of Quinoa

300ml of water

2 1/2 tablespoons of nutritional yeast

1/2 teaspoon garlic powder

1/2 teaspoon of salt

3 tablespoons potato starch (you can use sour sprinkles or wheat flour)

Olive oil to fry


  • Cook the quinoa. It will take approximately 10 minutes. You can season it before or after cooking: I chose to do it afterwards.


  • After cooking let it cool and add the seasonings of your choice. In this recipe I used only salt and nutritional yeast. Feel free to add chives, parsley, basil, peppers etc, OK?


  • Mix well. With the cooked quinoa there is no need to use the blender to make it smoother. The secret is to leave a few whole pieces of the quinoa, which is special crunchy ingredient on the outside after fried.


  • Add the potato starch slowly so that it does not get lumpy. Only 3 tablespoons or even less are enough to get the point.


  • Make mini balls with the “dough” and model as you wish :)


  • In a frying pan with just two little oil or olive oil fry for 2 minutes on one side after the other and it’s ready! I choose to use medium heat not to toast. Depending on your stove it may take about 2 minutes each side of the nugget. The point is when it is golden and looks like a nugget! Enjoy your food <3





For this recipe I used the nutritional yeast because it gives a taste that I like very much. But, it is an expensive ingredient and inaccessible to many people’s $$$. So just substitute the nutritional yeast for seasonings that you like. The flavor is guaranteed!

Do not add potato starch until the dough is not sticky anymore! The key is to make it light! It will stick in the hands, i know, but the taste gets better with less starch/flour possible.

No need to use the mixer in the cooked quinoa. Just stirring with the spoon is already enough and the crunchiness of it is to the whole quinoa flakes that will remain on the outside.

I do not like deep frying. I mean, but I don’t know how to do it :) It makes a mesh, spills everywhere and I get burned :( So I put only a bit of oil of the frying pan and fry one side after the other. It tastes very well and crunchy. If you prefer to deep fry, I’m sure will be nice and please share it with us!

Personally, the nugget is already crunchy on the outside. So I chose not to coat it with any other crunchy flour.The recipe gets easier, faster and in the end less messy? If you want to add extra crunchiness, let your creativity be free and share the results :)

I ate it with a spicy tomato sauce, it took my breath away! <3
